My number one guilty pleasure is red wine and now that’s it’s well and truly winter, I’m transforming it into a glass of soul warming mulled wine. There’s an array of recipes out there, but I prefer the one with minimal ingredient investment and simplified method-because honesty, all I want to do is get to the consuming part.

Here’s the recipe I used, adapted from adelineandlumiere.com, with a few lazy person adjustments.

750ml red wine
150g castor sugar (I used brown and added an extra sprinkle of powdered cinnamon) 
2 slices of lemon plus a pinch of rind
2 slices of orange plus a pinch of rind
1 cinnamon stick
5 cloves (do not go crazy with the cloves, they are small but pack a punch) 
1 tsp fresh nutmeg
pinch of ginger

1.  Place all ingredient except the wine into a large saucepan and place on medium heat. Add just a small glug of red wine to the pan to ensure the sugar is covered and let it simmer for 4-5 minutes.

2.  Once the mixture has become sticky enough, add the rest of the wine and turn down the heat. You don’t want the wine to boil otherwise all the alcohol will evaporate!!!

The longer you can leave it to soak up the flavours the better but 15-20 is sufficient.
